Spicy Chicken Soup

Original Recipe Yield 8 -1 cup servings
 

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup diced green bell pepper
  • 2 cloves garlic, pressed
  • 2 (14.5 ounce) cans chicken broth
  • 1 cup chopped cooked chicken breast
  • 1 (10 ounce) can diced tomatoes with green chile peppers

Directions

  1. Heat olive oil in a large saucepan over medium heat. Saute onion, green pepper and garlic until tender. Stir in chicken broth, chicken pieces and the diced tomatoes and chilies. Simmer covered for at least 10 minutes. Serve hot.
