This was great! It's not spicy or hot but has excellent flavor. The only thing I didn't put in was the green peppers. This will definitely be a new party staple of mine.

I followed the recipe exactly except for the fact that I used 2 fresh jalapeno's instead of canned. It was not spicy, but the flavor was excellent!

This salsa is great and easy to make. I had it while at a friend's house and decided to try the recipe myself. I did give my personal touch by adding to recipe: 1 tbsp of Frank's sauce, chopped cilantro,2 tbsp picante ready salsa.

This is really yummy from the start, but even better when it sits overnight or for several hours. I used good seasons italian dresssing(the one tht comes in a packet and you mix your self in the bottle) and ONE cup of dressing is the whole thing. Yes I will make this over and over. Very versatile recipe. You could use a number of things on hand if you were missing something.

This recipe is really delicious, but like other's I made several changes. Instead of using black eyed peas, I used half a can of garbonzo beans and half a can of pinto beans. I used frozen sweet corn, and fresh jalapeno diced instead of canned (and only 1/4 cup because I'm not big on spicy and I feel it can take away from the freshness of the other flavors in the dish). I used red onion instead of white onion, and about three nice Roma tomatoes instead of canned, and two cloves fresh minced garlic instead of the garlic salt. Instead of a half cup green pepper, I used half a cup of a mixture of red and yellow pepper diced (prettier colors and better taste with the salsa I feel). I also was very turned off by the idea of using italian dressing, so I used, like others, about 1 tbsp or so of olive oil, just a tiny bit of balsamic vinegar (1/4th tsp.), the juice of one lime, a dash of cumin, chili powder, and four twists of sea salt, juices from the tomatoes are nice as well to add more moisture. And chopped cilantro, which is a total necessity as other's have mentioned. I used a few handfuls, it really makes the taste more fresh and light. This is really delicious though and a great recipe, and thanks to the suggestions I read I altered it just how I liked it. That's the fun of it, you can do to it what you want and it will most likely turn out delicious. This is always a hit - neighborhood party, soccer tournaments, whatever. Super easy, and gets better as the flavors blend in the fridge. Make sure to rinse the canned beans for best flavor and appearance. You can make this even quicker if your supermarket has pre-cut onions, peppers, and tomatoes. I like this best with fresh rather than canned tomatoes). I used Wishbone Fat Free Italian Dressing, and addedd chopped cilantro. Yum!

Excellent. I used green onions, and I took about 1/2 cup of the mixture and blended it with the italian dressing. It made kind of a creamy dressing.

This salsa is the bomb! I followed the suggestions of using fresh tomatoes versus canned, clove of garlic instead of garlic salt, and a squeeze of fresh lemon, olive oil and balsamic vinegar versus italian dressing. I have made this twice and both times it disappeared by the next day when it sat overnight. My brother even makes toasted sandwiches with just the salsa! Great on a baked potatoe or cooked chicken breast too. One other thing I want to mention that perhaps may be helpful to someone is use vacuum packed corn versus a can of corn you have to drain, it is the equivalent to a 15 ounce can and the corn is not soggy!

This was awesome! Made for a party and was asked for the recipe several times. I made a few changes, just for my own taste preferences. I think this recipe really lends itself to letting you play around with it. I used only about half the onion called for (just not a big onion fan), used red pepper instead of green, and added some avacado and lime. If you like avacado, I really recommend it. It adds a nice flavor and a different texture. I used homemade italian dressing (Italian Dressing Mix recipe on this site). Delicious!

This is one of my all time favorites, although I prefer the name "Cowboy Salsa" or "Cowboy Caviar". I used Muir Glen canned roasted tomatoes and red onion and frozen corn (I like the texture better than canned corn). I doubled the recipe and made half without jalapenos for a party. Took a lot home, but that is okay with me! This is great and healthy if eaten in a salad or a wrap instead of tortilla chips. Really needs to be created way ahead of time (overnight) and served at room temperature for best flavor. Edited to add: This recipe makes the best quesadillas!! I slathered a whole wheat tortilla with black bean refried beans; a layer of this recipe; some chopped, pickled, jarred jalapenos; and a layer of shredded cheddar. Top with another tortilla and dry-fried both sides in a non-stick pan to crisp and heat the tortillas. NUM NUM. One of the best suppers I ever had.
