Omitted raisins. If you have trouble finding chutney, it is next to the BBQ sauce, at least in my grocery store. I used a 4.25 lb. chuck roast that was trussed. It took a little over four hours in the dutch oven. Don't rush it if it is not tender enough- let it cook another half hour and try it again.
Gravy was out of this world. Only took a couple of minutes to thicken with some cornstarch.
Served with garlic mashed potatoes and some steamed asparagus. Also threw some baby carrots in with the roast the last 45 min.
Have tried a lot of ways to season a pot roast but this is my favorite and will not try any other recipes.
