Ingredients

  • 3/4 teaspoon unflavored gelatin
  • 1/3 cup unsweetened apple juice
  • 1 cup pumpkin puree
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons white sugar
  • 1 teaspoon honey
  • 1 cup crushed pineapple

Directions

  1. In a small bowl, whisk together the gelatin and apple juice. Place bowl in a larger bowl with hot water and stir until gelatin is dissolved.
  2. Blend together the pumpkin, spice, sugar, honey and gelatin mixture.
  3. Spread 1/4 of the mixture in the bottom of custard cups. Top with 1/4 cup pineapple; repeat layers. Chill for 1 hour before serving.

I used agar agar instead of gelatin, and orange+apple juice instead of apple juice. Smells... MORE

It was okay, but nothing great. I'd stick with the regular pumpkin pie. MORE
