Spiced Acorn Squash

3/4 cup packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 acorn squash, halved and seeded
3/4 cup raisins
4 tablespoons butter or margarine
1/2 cup water

DIRECTIONS
Combine brown sugar, cinnamon and nutmeg; spoon into the squash halves. Sprinkle with raisins. Top each with 1 tablespoon of butter. Wrap each squash half individually in heavy-duty foil; seal tightly. Pour water into a slow cooker. Place the squash, cut side up, in slow cooker (packets may be stacked). Cover and cook on high for 4 hours or until the squash is tender. Open foil packets carefully to allow steam to escape.

I made this today as a side for my Thanksgiving supper and it was a hit! Bonus: cooking in the slow cooker saves space in the oven for turkey and other fixings. I left out the raisins since one of my relatives has an aversion to raisins, but it was still fabulous. Thanks for the great recipe.

I omitted the raisins and had to substitute 1/4 cup maple syrup and 1/4 cup unrefined sugar for the brown sugar, but these still came out simple and sweet! This squash makes a nice winter treat.

The spices for this recipe were good, but I will reduce the amount of brown sugar and cinnamon in the future. I also do not like and did not have raisens so I used dried cranberries instead. Those were a great substitution.

I grew up eating this. Serious comfort food for me. Sometimes, I'll change it up and use maple syrup and add in a chopped apple. It's heaven.

My husband and his family are big squash fans and I'd never attempted to make it before. I made this for Thanksgiving 2007 and he absolutely loved it. We didn't include raisins because I'm not too crazy about them but it was still wonderful. Thanks for the recipe!
