Speedy Salmon Casserole

"Next, she prepares the Speedy Salmon Casserole, which bakes at the same oven temperature as the cake. 'Living here on the Kenai Peninsula, we have plenty of fresh salmon. Bat this creamy, comforting casserole tastes just as good with canned salmon,' she assures. 'It's also a great way to use up leftover mashed potatoes--or dress up instant ones."

1 tablespoon butter or margarine
1 tablespoon all-purpose flour
3 tablespoons ketchup
1/2 cup milk
1 (14.75 ounce) can salmon, drained, flaked and bones removed
2 cups instant mashed potato flakes*
1 cup shredded Cheddar cheese

DIRECTIONS
In a saucepan, melt butter over medium heat. Stir in flour and ketchup until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes. Add salmon. Prepared mashed potatoes according to package directions. Spoon half into a greased 11-in. x 7-in. x 2-in. baking dish. Top with salmon mixture, remaining potatoes and cheese. Bake, uncovered, at 375 degrees F for 15-20 minutes or until heated through and cheese is melted.

I made this recipe for the 1st time today. I made it for my husband and my in-laws. We all loved it! It's very simple and tasty! The only change I made was I added more cheese to the top.

One star is generous. There is no flavor, it is a bad blend of mush. Nice try, but it needs some flavor and texture. I'm going to try to fry up the leftovers in a pan like potato pancakes.

I followed the directions exactly, except I used leftover baked salmon and homemade mashed potatoes. It was delicious! My kids even ate it! The only thing I might changed next time is to use a bit less cheese and mix it into the mashed potatoes on the top of the casserole.

This was o k. The canned salmon, itself, was kind of gross. It looked really nasty straight from the can and didn't taste too good in the casserole. The expiration date isn't until 2011, so who knows how long that fish had been dead. Next time I will definitely use FRESH salmon!!! I also made the mistake of doubling the cheese because I am a big cheese lover, but one cup is definitely enough!! Next time I think I will also try it with broccoli scattered on top to add a little more flavor variety.
