Because our children are grown, I often cook for just my husband and me. When I want to serve something special, this is the entree I usually reach for. Seasonings, black olives and feta cheese give steak great flavor. --Ruby Williams, Bogalusa, Louisiana

Chipotles in adobo sauce are dried smoked red jalapeno peppers, which are canned with a thick chili puree called adobo. They can be found in the Mexican section of your local supermarket. Like all hot peppers, handle these chilies and their sauce with care so they don't burn your skin or eyes. Unused chipotle peppers can be frozen. Individually freeze the peppers with some sauce on a lined baking sheet, then store in a resealable plastic freezer bag for up to 3 months.

AFTER our children were married and gone, I prepared this entree often for my husband and me, especially on our anniversary. It was one of our favorites. We found that one of the nicest ways to enjoy each other's company was to have a great meal together. -Ruby Williams, Bogalusa, Louisiana

WHEN my husband retired, we sold our home and traveled the country for 10 years in our house trailer. It was wonderful meeting people from all over. We tried foods we never ate before and exchanged recipes. This hearty, tasty main dish from a traveling friend has become one of our favorites. It's easy to prepare for any number of people. -Marie Ritchie, Apple Valley, California

'In summer, I love to marinate these steaks overnight, then grill them for family and friends,' writes Tim Hanchon of Muncie, Indiana. 'When the weather is not as nice, they can be cooked under the broiler.' The recipe makes a lot, so you can use the extra steak to make the two dishes that follow.

A simple-to-make recipe that's also inexpensive! Makes the house smell wonderful as it cooks, and tastes great on those chilly fall nights. We typically serve this over cooked egg noodles with a tossed green salad, but it would be nice over rice, as well. Enjoy!

This recipe is a family favorite that I created - and named! - myself. The spinach packs it with a real 'Popeye punch', and the other vegetables combined with the ground beef make it a hearty meal.
