Really good. I tripled the recipe and found it needed to cook for over an hour at that quantity. Also, I only had 1/4 cup carrot on hand (needed 3/4), so I increased the celery, bell pepper and onion to make up for the missing 1/2 cup. I suspect some more onion and bell pepper enhanced the flavor. Next time I'll add some dashes of hot sauce, too, for more flavor.

The blended flavors was great. The added colors even made my grandkids try it.
