Royal Rhubarb Coffee Cake

This recipe is a variation of one a close friend and I make for our home baking business. I've used raspberries and blueberries in place of the rhubarb with winning results.

My great-aunt gave me this recipe. It's especially delicious when rhubarb is in season, and tastes even better with the old-fashioned milk topping. But you'll love it even with frozen rhubarb and 'modern-day' whipped topping!

Since rhubarb grows well in our frigid climate, I freeze a lot of it. I have plenty on hand to make this old-fashioned coffee cake and other rhubarb treats.

This old-fashioned bundt cake is so moist, it doesn't need any frosting. But I sometimes sprinkle it with confectioners' sugar for a pretty presentation. --Mary Zawlocki, Gig Harbor, Washington

This recipe, passed down from my mother, is perfect for church or social functions. I can be made ahead (it freezes beautifully) and is not sticky or crumbly--that's important if you're trying to walk around and socialize.

We have a rhubarb patch, so I'm always looking for recipes featuring this 'fruit'. I've served this coffee cake to people who say they don't like rhubarb, and they've always told me how much they enjoyed it.

'I adapted several coffee cake recipes to come up with this tender treat,' notes Deb Quest of Saskatoon, Saskatchewan. It's so moist and yummy that even people who usually don't care for rhubarb (like me!) ask for seconds.'

I received this recipe years ago from a co-worker. Today, my family and I really enjoy this dessert. It's nice for any occasion.

Delicious served warm with ice cream. If you don't have buttermilk, you may substitute sour milk. Stir 1 tablespoon of vinegar or lemon juice together with 1 cup of milk and let stand for 10 minutes.
