I make something very similar to this and we call it a breakfast quiche. I use a whole pound of cooked meat (sausage, bacon, etc.) a sleeve of finely crushed Club crackers (which equates to about two cups) omit the butter and combine all. Bake in a 9x13 casserole dish. Do not double it as it will not turn out right, just make a sccond batch. You can prepare in advance or bake immediately and it reheats well.

I made this for a bunch of first graders and they LOVED it! We aren't a casserole family but surprise surprise I think we are now!

We didn't care for the saltines, it left a odd texture.

This is a great recipe. Very tasty, very easy. I choose it for it's simple ingredients. I served it to a dozen teenagers and they gobbled it up.

Easy and really delicious. The best breakfast casserole I've tasted.

This was excellent, my husband really doesn't like casseroles and he loved this, great for warming up afterwards as well. I added about 1/4 cup of parmesan to the mix.
