I loved this recipe! Now, I know that some dislike when people change the formula and then review, but I always find it helpful. I left out the celery and bacon (personal tastes), and used the fresh basil idea. What a wonderful flavor - tangy and fresh - not typical with mayo potato salads. Thank you for this tasty alternative!

Made this today for my husband and father. I made the recipe as directed, but did not incorporate all the bacon, limiting it to just one strip. Both my father and my husband feel the recipe is significantly better than anything store bought, but when compared against other homemade recipes it wasn't nearly as good as some others they have had in the past. What really appealed to my husband was the reduced fat. He would definitely eat it again just because of that, but it just doesn't stand out for him.

This is really, really good! I am still chilling it, but I couldn't wait to try it, and even warm, it tastes amazing. I picked this recipe because my husband doesn't like mayonnaise and therefore would not eat the normal potato salad recipes that I like. I expected this to be good but not creamy at all, but I was wrong. It has a very good flavor that still tastes creamy. I halved the recipe because I was skeptical about the healthier ingredients of this tasting good, and now that I've tasted it I wished I had doubled it! I bet you could add more or less of certain ingredients to suit your taste too. I used turkey bacon, but the only other ingredient I changed was using fresh chopped basil since I was out of dried basil. I still can't get over how wonderful this recipe is. Thanks for sharing this version of potato salad, I will definitley make it again.

I have never made a potatoe salad. My Mom is the winner in that but she wasn't around to make one this time. So I started searching. I didn't change a thing and I have never enjoyed eating a potatoe salad more. This recipe had a wonderfully fresh flavor, easy to make, and leftovers were even better! My dad isn't with us anylonger but he would have been so proud of me and this would have been one he would have loved very much. Thanks for an awesome salad that made me a Potatoe Salad maker for the first time ! I'll make it over and over again for any special event or just for the family dinners.
