12 cups chopped fresh or frozen rhubarb
4 cups water
2 1/2 cups sugar
1 cup pineapple juice
2 liters lemon-lime flavored carbonated beverage

DIRECTIONS
In a Dutch oven, bring rhubarb and water to a boil. Boil for 15 minutes. Cool for 10 minutes; strain and reserve juice. Discard pulp. Add sugar and pineapple juice to reserved juice; stir until sugar is dissolved. Chill thoroughly. Just before serving, add soda and ice cubes.

I only added one cup of sugar and it was still way to sweet. Maybe with club soda would be better.

When I made this I used only 1 cup of sugar and instead I added 1 cup of pineapple juice. With this variation it was still very sweet and this is what my son wanted me to make for his punch for graduation. Very good recipe with room to adjust to your own taste.
