Very nice recipe. I multiplied for 8, and it made a LOT. I'm thinking it would feed 12 as a side dish. I used 3 cups of tomatoes (lots of fresh ones from the garden I'm trying to use). I used brown rice, and initially it was dry and a little bland. I added about a cup and a half water, and doubled up the spices (careful with the seasoned salt, tho) I also added cumin and finally, when I thought it just needed more zip, a little cayenne pepper. Yum. I hope I can freeze the extra!

I have been looking for a great Spanish rice recipe and this one is just about like my favorite Mexican resturants! Instead of all that chopping I used a seasoning blend that contains onion, celery, peppers and seasonings. I sauted these with chopped garlic in some butter instead of using water. I also added mixed veggies..i.e corn, peas, carrots, green beans..because some resturants use those.Yum Added seasoning salt and chili power to taste. Even my picky 10 year old..who doesn't like Mexican food..ate it and asked for more...served this with tacos...it was great!

This is so good! Other than all the chopping involved, it's a pretty easy recipe. I used regular rice and a little more seasoning but those were the only changes. Thank you for a great recipe!

I thought this was a great easy recipe. I did not have any green pepper on hand so I just left it out. This is much better than a box of Spanish rice from the store and almost as quick. I will be making mine this way from now on. Hubby loved it!

Very nice flavor. I added some red and yellow pepper, and I might be tempted to add a little chilpolte pepper in adobe sauce to give a little extra boost. Thanks for sharing!

I made this recipe with a few changes. I precooked the rice in water using 2 cups of organic brown basmati (5 cups cooked). I increeased the recipe size to 8. I put in at least 2 teaspoons of minced garlic, 1 1/2 tsp. chili powder, 1/2 tsp of cayenne, and a can of tomato soup. I also fried up a pound of bratwurst and then added the chicken broth to the brat and sauteed the veggies, adding the fresh tomato last. My grandkids thought they had died and gone to "grandpa can cook" heaven. I've never seen them polish off so much food at one serving. It was wonderful and spicy.

This is a good recipe if you want something other than white rice for a change. It was a big hit. A little bland tasting, and too spicy for my children until I added one small can of tomatoe soup. I will definitely make this again!

It's very easy to make, and very tasty! I love that it makes just enough for two people, but it's easy enough to double or triple if you want. I also like adding in a little bit of corn, too.

We loved this. I made it with the Chicken Flautas recipe is on here. I did not have fresh tomatoes so I added the rotel with green chili's..It turned out wonderful!!!
