I actually neglected to see that this was supposed to be cooked for 6 hours, and only left it over heat for about a half hour. It was still great. So, don't let the cooking time scare you - you can make this flavorful dish in a much shorter amount of time!
We also made this with vegetarian bacon, and it was still a hit.
