This was delicious and very easy to make. I don't care for tomatoes much, so I only used half the amount. I also used goat cheese instead of feta - it was perfect! This would even be great in a simpler version with just the onions, garlic, basil, and cheese.. will definitely make again!

This was delicious, even though I adapted for what I had on hand. I sauteed an onion, a couple cloves of garlic, several mushrooms, a head of broccoli, and some spinach along with a can of drained diced tomatoes. After the veggies were mostly cooked I added a can of tomato paste, a splash of red wine, and some chicken broth, and powdered basil and oregano, stirred it all well and let it cook covered for a few minutes till everything was totally done. I then put it and the squash insides in a big bowl and tossed, then topped it with goat cheese, and my boyfriend and I both loved it. Definitely easily adapted to your veggies/tastes!

This recipe was very good! I added in a half of a finely chopped zucchini, 1.5 tsp of Kosher salt, 1/2 tsp garlic salt, a few dashes of cayenne, a pinch of italian seasoning and crushed red pepper and a heaping tsp of minced garlic. I sauteed the garlic, onion, and zucchini together, tossed in a can of diced tomatoes in place of raw, added the seasonings and heated through. Cooking the squash halves, open side down for 30 minutes in 1.5 cups of water worked wonderfully! I will absolutely be making this again! Oh yes, and the feta really brings the dish together beautifully. I highly recommend this recipe. **Just an update, I've made this dish several times and it's a regular. When I don't have zucchini, I toss in another veggie, like spinach and just eyeball it to how much I like. I microwave the spaghetti squash halves like recommended, 5-6 minutes each on face up and face down. I also season to taste at the end. When I don't have feta, gorgonzola is also yummy. dELICIOUS! THIS WAS GREAT. IT HAD ALOT OF EXTRA JUICE BUT IT WAS GREAT THE NEXT DAY WHEN RE HEATED IN THE MICROWAVE AND THE FETA WAS MELTED!!

This dish was delicious! I'm not a huge squash fan but with spaghetti squash it absorbs the flavor from the sauce its mixed with. My husband and I both loved it and the mixture of onions, garlic, basil and tomato would make a great glaze for many different meats or chicken. Yum!

I used a yellow onion and also sauteed some zucchini with it. My boyfriend said it was one of the best recipes I have ever made for him. Next time per request, I am adding shrimp. I think it will be even more amazing!! Next time, I am also going to serve some crusty bread to soak up the juices.

Wow - I was expecting this to be good because I love all the ingredients in it, but holy cow! This was excellent! I accidentally overcooked the squash, but it was still wonderful. I don't like black olives so I used kalamata olives instead, and I used 1 tbsp of jarred basil. I topped it with a sprinkle of parmesan cheese and this is now one of my new favorites. Definitely will make again.

This was really amazing! Very easy to make, it looked and tasted great. I under cooked the squash a little and it added great texture also I add a little extra basil. Will be a new family favorite!

This was really simple and came out great. I didn't have the feta or olives, but I just sauteed up some veggies I had and added some tomatoes. Then I topped it off with some grated parm (less fat than feta too). Low fat, low carb, low cal. I loved it and I will use this recipe again.

Ehhh, it takes MUCH longer for the spaghetti squash to cook. Once it was done, it was ok, we actually enjoyed it with spaghetti sauce and a green salad. However, I won't be making it often. I just need to figure out why it took so long for the squash to bake...

I made this recipe for my family and they all enjoyed it. I added a substantial amount of fresh vegetables that I sauted with the onion and garlic. We had crusted bread with butter on the side and it was a complete meal. Everyone voted to keep this one.

DE-LIC-IOUS!! if i could give this recipe 10 stars i would. i followed the suggestion of some other reviewers and (1) substituted 2 tblsp basil pesto for the fresh basil and (2) substituted a can of italian stewed tomatoes (i chopped them) for the fresh tomatoes..other than that i followed the recipe to a T!

We loved it! My wife and I had no idea what to do with a spaghetti squash. This looked promising and it was a hit. We made a few changes. We are garlic lovers so we used 4 cloves. Next time it will be a full ear. We also doubled the basil. On a side note we saved the seeds and toasted them for a light desert. We are planning on making this for a vegan potluck and using pine nuts instead of feta. THANKS!
