This was a meal that my whole family enjoyed. Instead of the egg substitute, I used real eggs, but I think the pasta may have possibly stuck together a little better with a thicker mixture. I skipped the bell peppers and mushrooms and mixed in a pound of ground beef with the sour cream, cream cheese, and parmesan cheese.

Great way to use up leftovers! I skipped the garlic/mushroom layer (didn't have any 'shrooms) but pretty much followed recipe but for that. I used leftover homemade meatsauce and added some chopped bell pepper to that. Very easy and tasty.

I make this for my family all of the time. My daughter is a vegetarian and my husband and son are not. I double the recipe and make two; one with ground-beef and the other without. I freeze the leftovers individually for my daughter. It reheats beautifully.
