Excellent! I lived in Rome for two years, and this version, without cream is very authentic. My only change would be a healthy dose of pepper (where the name Carbonara comes from.)

Authentic and delicious. Yes on adding the black pepper, but I leave that to the individual diner.

Delicious! I tweaked it a bit myself, though...I substituted olive oil for the butter, and used a lot less of it. I also added minced garlic to the beaten eggs, and LOTS of fresh-cracked pepper. My husband loved it...it was creamy, bacon-y goodness!

This is one of our favorites, instead of cooking the sauce we just pour the hot pasta over the eggs, butter, bacon, chese, and lots of black pepper. I find this makes a very creamy sauce and eliminates the bits of cooked egg in the sauce. Obviously not recommended for anyone who should not eggs.

I was looking for something quick to make for lunch and this came out just right. This recipe is the closest to the real "Spaguetti Alla Carbonara" I could find, the authentic recipe asks for olive oil instead of butter, fresh ground pepper and a little (very little) heavy cream. I made a few alterations to be lower in fat: since I don't eat red meat I didn't use any bacon, whole wheat pasta, 2 eggs + 1 egg white (for extra protein), 2 Tbsp of half and half, fresh ground pepper and a good quality parmesan. It turned out a lighter version of the real Carbonara.

Very tasty, but it seemed to be lacking something... Perhaps my step-dad (who is Italian) made it a different way - I'll have to find out his secret ;);)

Awesome! I used turkey bacon, 3 tablespoons of margarine instead of 1/3 cup, and I added some minced garlic and spinach. I've never had Spaghetti Carbonara before, but this was YUMMY!
