If I could give this recipe six stars, I would, it's THAT good! I had it last night and I think I dreamed about it last night LOL. Ever since I had the real thing in Italy, I've been searching and searching for something like it here, finding myself really disappointed when I order it at restaurants. THIS recipe is it! I did use only half of a large onion because it was all I had and I don't think I would have wanted more. I think the white wine should definitely be included. Some people suggest adding heavy cream to the recipe, it does take away from the authenticity of carbonara but who cares, it sounds delicious too! Just don't overdo the cream or you'll interfere with the other flavors. One important piece of advice to handle the egg, as other reviewers mentioned, is to beat the eggs in with the parm cheese first and make sure it's well mixed before adding it to the pasta. Use good parm cheese for this recipe, I actually used Locatelli instead because I prefer the flavor. Thanks for an AWESOME recipe!

I made this the other night for my family my teenaged kids loved it so much that my husband didn't get a chance to try it. I used herb flavoured tortellini instead of spaghetti because I had some in the fridge and wanted to use it up. I didn't use wine because I didn't have any, instead I used chicken broth. I found that I had to use more then the recipe called for. I added the egg right after I drained the pasta and the egg cooked up so my pasta had litttle bits of scrambled eggs in it. One other reviewer suggested letting the pasta cool a little then add the egg and cheese mixed together into the pasta. Next time I'll try this method to see if the pasta comes out creamy. I also didn't feel the need to add the extra salt called for maybe because of the chicken stock even though I used low salt stock. If this had turned out creamy I would have given it 5 stars. I made this recipe again tonight and it turned out better than the first time. I added 3 cloves of garlic. I let the pasta cool a little so that it wasn't so hot and it turned out a lot creamier instead of having bits of scrambled egg in the pasta. I had white wine this time still had to use a little more then the recipe called for but it added another layer of flavour much better then using broth or water. I had left over roasted chicken (about 1 1/2 cups) so I added that in to just before adding the hot pasta and the rest of the cheese. Family loved it. Will make again.

Totally hit the spot. Now that I'm writing it all out, I guess I made more changes than I thought...Penne instead of spaghetti, 2 large shallots instead of an onion, butter instead of olive oil, chicken stock instead of white wine. All these subs were b/c it's what I had not b/c I think any were needed. I combined the eggs, cheese and parsley along with 1/4 cup of half and half and then poured it over the pasta at the end and tossed. It was terrific.

This recipe was fantastic! The only thing I changed was I made it with Angel Hair Pasta rather then spaghetti. Thank you, it was delicious and easy to make. I will be making this again for sure.

This was so good and so easy. As others had suggested, I mixed the egg and parm together before tossing in the noodles, I also added some cream, too die for. So rich and creamy, my whole family loved, and it was even better warmed up the next day.

I made this for the first time and it came out great. I did add heavy cream in place of the wine to give make it easier to mix and I also added peas.

eh.....not bad, not good. This was easy to prepare but I thought for all the great smells during cooking it would have tasted better. I added the cream which most people suggested and I can't imagine what it would have tasted like without it. Nutmeg didn't make much differance in my mind.

I don't know why but I just didn't enjoy this recipe. Perhaps it was because of how oily it was or maybe it needed some more flavor. What ever the reason I don't think I will make it again.

I absolutely love this recipe. I have made it about 3 times now and cant say enough good things about it. There are never any leftovers. I did use Oscar Meyer turkey bacon and it's still fabulous.

My family loved this meal, and it was easy to prepare. I used turkey bacon and canadian bacon to help make it lower fat. I mixed the cheese and eggs before adding. I used the wine and it made the difference. Fresh herbs would help finish this dish!

This is now one of our favorites. It is easy, cheap, and yes very unhealthy. The only thing I changed is to mix the egg and parm (I used the bagged shredded) before I add it to the pasta. Thanks for the recipe.

I loved this, very fattening though! Def. not a "healthy" dish! I will make it slightly different next time as it lacked a little flavor. I will make 12 slices of bacon,3tbp of bacon dripping and add pepper and salt and 1c of grated cheese...
