Very very good! I cooked the bacon in the oven (cut down on the mess and grease)added 1/4 cup dry vermouth instead of white wine to the onions, some green peas and 1/2 cup half & half, and it turned out marvelous!

Outstanding and easy. I did a whole package of bacon. Chopped raw and cooked it 2nd. Washed off the spaghetti noodles with cold water before mixing with beaten eggs and parm. cheese, and SLOWLY simmered it to being warm again. (Like others said, else the eggs will cook.) Thank you for sharing your recipe and all who contributed their techniques. I see it continues to be a hit after so many years.

Made this last night for the family. It was a huge hit!! At first my husband thought oh it's just pasta. Then after the second helping decided I could make that anytime! This recipe was awesome! I'm not a big fan of pasta with your standard marinara sauce, this was a breath of fresh air. I think if you're going to use a pound of spaghetti you may want to use a little more bacon, eggs, cheese, and olive oil to cover all the pasta. Thanks for the great recipe :)

WOW! What a great alternative to your typical spaghetti. My very picky husband gobbled it up. Mine was not dry though, like other people mentioned. But I made a couple changes, so not sure if that is why it didn't dry out. Since I was only cooking for two, I only used half a box of spagheetti. I also tempered my egg by bringing them to room temperature before beating and slowly adding bacon grease to the eggs. I also did not add the eggs to the noodles in a hot pan, so my eggs did not scramble. I also added frozen petite peas. Good luck, as there is a little bit of technique required for this so as not to scramble your sauce.

The flavor was very good in this recipe, but the noodles lacked "sauce". I made this for my husband on valentines day, and we had to wash it down a lot, (yeah vino!) because it was a sticky bunch of dry noodles. I would try using a little heavy cream next time, and temper the eggs with a little of the cooking water from the noodles before adding them, so they dont set up too much.

Loved this :) The only thing I did different was used Turkey bacon and loved it!!! I have been looking for this recipe for a long time- it was worth the wait. I bit sticky- not sure why- But loads of flavor and loved every bite. The kids ate it right up as well as the Husband- thanks

It turned out a little dry for me. I ended up adding cream and more wine. My bf liked it and said he would eat it again. Not good for leftovers.

This is a great recipe. I used just regular bacon and found that I needed more. The pasta over powered the bacon. It was still really good though. I also highly recommend using the wine. It comes out really dry without it. And serving it right away is also a must. My dried out before the husband got home. I served it with garlic bread and it was a BIG hit.

It was a little dry when I made it, and make sure you use a large pot and skillet when doing this, it gets a lot of stuff in. It would be a really good idea to add the white wine, but may be even better with a little cream.

I have never had spaghetti carbonara before so I didn't know what to expect. I figured it would be good since the recipe includes 3 of my favorite ingredients: pasta, bacon & eggs. Definitely a good, cheap & easy recipe. The real test is when my husband comes home. If he likes it I'll raise my rating to 4 stars. Update: Husband loved it.

Uhm Yeah, this pasta is the bomb! I make this all the time and everyone loves it. I was afraid to make it at first, thinking it was too delicate and complicated but it really wasn't. I reserve about a cup of the pasta water in case I need to thin out the sauce a bit and it comes out perfect everytime! It tastes better than anything I could get in a restaurant!

Mmm Yummy! Loved this one! Cheated a little and used pre-cooked/chopped bacon (from Costco). Also mixed the parmesan and egg together before adding to the pasta and it was VERY creamy. What a great brunch food this would be!
