This was incredibly delicious. I didn't change a thing. I used reisling for the wine and I definitely think that it is a 'must' step instead of optional to use the wine, it just gives it that extra depth of flavor. It fairly easy as well so it will definitely be going in the make again pile.

YUMMY! I didn't do the egg like it said. I added it after I cooked the garlic and I didn't add salt. It was really good.

This is an awesome recipe! We really loved this dish. I also added the parm cheese, and a bit more than called for, to the beaten eggs. I also used less spaghetti. The wine gives a wonderful depth of flavor to the sauce. Just had to say thanks for a great recipe!!

The perfect carbonara! I have tried several recipes and loved them, but there was alway "something" missing compared to the one I tried in Rome. Its the white wine!!! There is nothing missing from this recipe! (although I don't cook the eggs either... add egg and cheese together to hot pasta, stir in pan until evenly coated and serve)

Delicious! Cooking is not my favorite thing to do, and I am always on the lookout for easy, but delicious meals. This one fits the bill. My family loved it! I will be making this dish again and again! I also mixed the egg and cheese before adding and the texture was creamy and perfect. I did use a touch more olive oil with the onion, so the pasta mixed quite well and wasn't dry at all.

Everyone loved this recipe! i did make a few changes though. I added a dash of red pepper flakes, 3/4 cup of heavy cream and more bacon. will definitely make this one again!

EXCELLENT! I've made this for a long time but just never reviewed it before. Like so many others, I too mix my cheese into the eggs and allow the heat of the pasta to cook the eggs. For some added richness (like it needs it), I did use up about 1/4 C. sour cream that I had too. Actually mixed that with the eggs and cheese & blended til smooth. Additional parmesan at the table and we were set. Such a classic pasta dish that is a family favorite.

This was good, but here are some tips: I took the advice of some others and combined egg and parm together before putting it in pasta. The recipe NEEDED more bacon. Also, I had to make an additional mixture of sauce because it was too dry, so I would double that to start with. I also added chicken.

This was good, but I wouldn't say it was great. Definitely needs more of everything. Also, needs salt and pepper and lots of it. We also added parmasan cheese, which made the dish. Otherwise it was pretty bland and dry. I also had to add more oil. I used turkey bacon doesn't make any grease. Maybe thats why. Thats my opinion on it anyway.

I've wanted to make Carbonara for months but was always frightened off about cooking the egg and ruining the dish. Tonight I felt brave and found a great recipe to add to the regular rotation. =) I took the advice of others of combining the egg and cheese and added it to the dish after the pasta had cooled slightly. Creamy goodness! I used Turkey Bacon because that's all we had. The only comment my husband made was that he wanted more bacon and perhaps mushrooms in it too. Other than that he really liked it. It was quick, easy, and all ingredients are readily stocked in my house... love it!

Quite nice; we liked it alot; my daughter thought it was ok; my stepson ate barely half; if that, of his. Did add a bit more garlic; as well as some mushrooms; some capsicum (bell peppers for those in America); and some spinach; and omitted the wine (as we don't drink any at all; didn't see the point of getting some jus to use a little bit of the bottle; as the rest would have been wasted) - I do realize all of this would have changed the flavour a bit; but we liked it as we'd had it. Great base recipe; though!
