Southwestern Stuffed Green Peppers

"Stuffed green peppers are a real treat for guests. This recipe serves a crowd. Just divide the recipe in half to serve a smaller family."

INGREDIENTS (Nutrition)

  • 8 medium green bell peppers
  • 1 pound lean ground beef
  • 1 (20 ounce) package Simply Potatoes® Southwest Style Hash Browns
  • 1 (15 ounce) can petite diced tomatoes
  • 1 (15 ounce) can Italian seasoned tomato sauce

DIRECTIONS

  1. Heat oven to 350 degrees F. Cut off top of peppers. Remove seeds and spine. Place 1 inch of water in shallow Dutch oven or 10 quart saucepan. Bring to a boil over high heat. Reduce heat to low. Add peppers. Cover and steam 4 to 5 minutes or until peppers are crisp tender. Drain on paper towel. Place peppers, tops side up, in 13 x 9 inch baking pan.
  2. Meanwhile, cook ground beef in 12-inch nonstick skillet over medium heat until no longer pink. Stir in Simply Potatoes® and diced tomatoes. Continue cooking until Simply Potatoes® are tender. Cool mixture 10 minutes.
  3. Stuff each pepper with 3/4 cup meat mixture. Pour tomato sauce in pan around stuffed peppers. Cover; bake 20 to 25 minutes or until peppers are tender.
  4. To serve; spoon sauce over peppers.

FOOTNOTES

  • Tip:
  • Use two cans of tomato sauce if you like extra sauce to pour over peppers.
