Ingredients

  • 2 cups Minute® White or Brown Rice, uncooked
  • 1 (15 ounce) can black beans, drained, rinsed
  • 1 cup corn
  • 1 medium red bell pepper, chopped
  • 3 green onions, sliced
  • 1 cup Italian dressing
  • 1 cup salsa
  • 1 cup lightly crushed tortilla chips

Directions

  1. Prepare rice according to package directions. Place in large bowl; cool.
  2. Add beans, corn, bell peppers, onions, dressing and salsa; mix lightly. Cover and refrigerate at least 1 hour or until ready to serve.
  3. Top with crushed chips.

  • Garnish with fresh cilantro, if desired, just before serving.
