Delicious dressing!! I had already mixed together a salad of bow tie pasta, diced chicken, carrots, celery & red onion, corn, peas, cilantro, and a can of ro-tel. I came on here to find a dressing to toss it all in and I stumbled across yours. Delicious! I don't normally review on recipes where I've changed a lot of ingredients (because then I'm not really rating the recipe), but I just had to commend you on the dressing and how nicely it fit with my southwest salad. Thanks for sharing!

I made this yesterday for a party. The only changes I made was I used red pepper instead of green (I prefer the taste) and I added a can of black beans for protein. Delicious! Would make again.
