Everyone loved it. Used flour tortillas, added two green peppers, used 2 lbs. ground turkey and doubled all the spices except salt. Didn't add the layer of cottage cheese and egg and it turned out perfect.

Really great with a few additions: I used the diced tomatoes that have onion and garlic added and I added a can of white hominy to the sauce for added texture. After tasting the sauce I had to add a bit more salt and garlic powder. I used corn tortillas and lightly buttered them which kept them soft. Might be nice to add black beans next time. I served this with a side of the Sweet Corn Cakes from this site....yummy meal!

My husband normally does not cook. So when he decided to dive in and give it a shot he picked this recipe. With no help from me, he pulled it off and it was delicious. Our 4 kids gobbled it up. Also my husband is no longer allergic to cooking.He did an amazing job. You Go Baby!!

Very good recipe in which you can modify to your preferences. Used 1 lb. ground beef and added 1 can refried beans, 1/2 packet of taco seasoning plus chili powder, cumin & cilantro, mixed ricotta & cottage cheese together, used corn tortillas but will crisp them before baking next time, substituted shredded Mexican blend cheese for the sliced Monterey Jack. Sour cream and jalapeno peppers served as toppings. Leftovers reheated well. Next time will try some black beans or chili beans in the recipe & maybe add some corn.

Great recipe. Made it for dinner today. I added 1/2 lbs of pork sausage, ricotta cheese, salsa instead of diced tomatoes, flour tortillas instead of corn, taco mix and Mexican mixed cheese. It turned out heavenly.

Wonderful recipe! I did make a few changes. I added onion powder, cumin, paprika & chili powder.I didn't have black olives, but I did add fresh roasted green chiles. I shredded the cheese, rather than slicing. My whole family raved! Thanks for sharing.

This was pretty tasty! I changed a few things to make it healthier... ground turkey, FF cottage cheese, eggbeaters, and a just a small amount of reduced fat cheese. Also, I layered the tortillas then cottage mixture, then cheese, then meat and repeat. I like the torillas at the bottom so it sticks together better.

I know this recipe doesn't need another 5 star rating but it sure deserves one! I didn't have enchilada sauce and my local store didn't stock it so I used another recipe from allrecipes.com for "easy enchilada sauce" and it was terrific! My enitre family loved it.

Not that this recipe needs another rave review, but I made it for a dinner party and everyone went crazy for it. It was easy to make, and could be done ahead of time which is always great for entertaining. Served with spanish rice, it was the perfect meal.

This was so delicious!! My 'picky' teenage grandaughter could't get enough of thgis and had it for breakfast the next morning. Only chabge is I used 2 cand of enchalida sauce, one med and one mils. Thanks for the great recipe. minnow

I made this recipe the other night with some modifications. I used 2 cans of the red enchilada sauce, and before layering the tortillas I spread them with refried beans and placed them bean side down, I also used the shredded Mexican 4 cheese package throughout and for the diced tomatoes I added a can of Rotel tomatoes & green chilies. It was a hit with the guests, and even my husband who is extremely picky will eat this without hesitation.

I made this to take to a Mexican Dinner Night with friends. This was very good - easy to make, and there were no left-overs. The only thing I did that was different from the recipe was using shredded instead of sliced monterey jack cheese, and I used a little more than was called for. Will make again.

I made this last night and my family really loved this . I used Salsa in it instead of the enchilada sauce & tomatoes, and I used the shredded Mexican cheese instead of the sliced. I also made a mild version with no tomatoes or salsa and I really enjoyed it too. NO leftovers and it was cheap to fix and easy too.

Delicious! I changed a couple things, just to fit my family's preferences- flour instead of corn tortillas, a sprinkle of cayenne in the meat mixture, and a colby/monterey jack blend in the layers, and a taco cheese blend on top. Will definately make this again!
