INGREDIENTS
1 cup chopped onion
2 garlic cloves, minced
2 (15 ounce) cans yellow hominy, drained
2 cups chopped tomatoes
1 (4 ounce) can chopped green chilies
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1/2 cup reduced fat shredded Cheddar cheese

DIRECTIONS
In a large skillet that has been coated with nonstick cooking spray, saute onion and garlic until tender. Add the hominy, tomatoes, chilies, chili powder, cumin and pepper; mix gently. Transfer to a 2-qt. baking dish that has been coated with nonstick cooking spray. Bake, uncovered, at 350 degrees F for 25 minutes. Sprinkle with cheese; bake 5 minutes longer or until the cheese is melted.

My husband grew up in the Southwest and almost flipped his lid when he smelled this side dish cooking. It was delicious and I'm sure it will become a regular menu item.

Five starts for quick and easy!! Made this with diced chicken: olive oil, cilantro, parsley, sage, paprika, lemon pepper, sea salt, garlic and onion powder. Added to the main recipe: paprika, cilantro, shallots and a huge dollop (about 2 tablespoons) of sour cream to the mix before placing it into the oven. I also diced up some celery with the onion to give it more color and texture. I used less green chili (about 1 tablespoon) due to small children. Came out fine. One could probably cook this on the stove alone rather than baking. Will certainly make again.

Wow!!! Hominy that my husband will eat! Made it for company and there were no leftovers. They couldn't believe they liked it but they did. Made exactly as per recipe.

This Recipe is GREAT. I have have found that when I am short on time and need something quick I uesand have used a can of Rotel~Mild Thank you for this recipe.
