great recipe. I used egg roll wrappers and chilled them in the freezer for about an hour and they came out great! I boiled chicken breasts until tender (I was careful not to over cook these) and after they cooled a bit, I diced the chicken and seasoned with a dry Jamaican Jerk rub type seasoning and left in the refrigerator for while as I went about preparing the other ingredients...when I had everything ready to go I esseintially stirred fried the chicken in the skillet, added everything but the cheese and transferred to a bowl where I added slowly mixed in the cheese. I filled the egg roll wrappers and sealed with an egg and water wash and they set up nicely in the freezer and fried perfectly in a deep fryer. I barely had put the diagonal cut on these before my poker buddies devoured them!

At first I was not going to use the spinach as called for in this recipe. I love spinach in all forms, however my dad and brother gag at the sight! But I decided to sneak it in there and they didn't even notice. Actually everyone in the household LOVED them...I got several compliments! I baked them instead of frying, that way I wouldn't feel so bad for smothering them in sour cream and avacados!

This recipe is delicious. Upon reading a couple reviews I noticed that this recipe is a version of a popular restaurant. So no wonder its so good! There is a avacado ranch dipping sauce thats supposed to go with them that isnt included in this recipe. If you do a simple search for these, you will be able to find it on zaar if you like. I just dipped them in salsa and sour cream and they were delicious! If your frying these use egg roll wrappers instead of tortillas. Tortillas would be better if your planning on baking them in the oven. These are great to make a big batch and keep in the freezer, so when you want some you'll always have them ready and you can just pull them out and fry them up! A favorite!

This is so good I could not wait to make this again. I baked them the first time and the second time I deep fried them. Both ways excellent. I also used egg roll wrappers, personal taste. Used Amy's cilantro cream sauce for dipping.

This is my favorite recipe on this site to date. I doubled the recipe, used flour 'Fajita' size tortillas, replaced the Parsley with Cilantro, and baked 10 minutes at 425. Fresh jalapeno salsa was used as the dip. This was a crowd favorite at my Super Bowl party.

this recipe was great i made it for superbowl was a hit. i changed a few things though .. i diced up the chicken sauteed it then followed the directions with adding additional recipes.(i added more of everything though i like a lot of flavor.)then just put the tortillas in a damp cloth and microwaved for a bit to get warm added the ingredients and used toothpick to secure and had a skillet with oil ready *about a inch of oil.. and just fried it on both sides till golden brown.. no need to deep fry.added fat.also made with the creamy cilantro dip.. PERFECT.

This is THE BEST appetizer recipe ever! I have never made anything this delicious. I don't cook too often, so my dishes tend to be average, but this was excellent! Everyone liked them, and said they taste just like the ones from Chili's (maybe even better). I followed the recipe exactly, except for the freezing time. I only had 1 hour, so I put toothpicks in them to keep them closed.

Sooo good. I made these with no onions and baked them for 12 min at 450. I did come up with exactly five egg rolls. They were gone! I was waiting for one of my girls to not be able to finish the whole thing, but no such luck. I had to split one with my husband. Definitely will have to triple this recipe. Thanks for sharing!

This was as good as the previous reviews stated. I have made them 2 ways: baked using tortillas and fried using egg roll wrappers. Definately the best way to go is the fried and egg roll wrapers. They are easier to use than using the tortillas and fry up better. I have made these probably 5 times the the last month for different gatherings and such and get asked for the recipe every time. I did not change any of the ingredients except for the wrappers and I doubled the ingredients and there was still none left. They taste just like something you would get at Chili's Restaurant.

Okay, I wasn't sure how these were going to turn out because I thought I had black beans but turns out I didn't, so I used pintos. Didn't have any cumin either, so I just added other spices like garlic and onion powders. Didn't have red pepper either. Anyway, I doubled the batch and put it all in 8 flour tortillas, (didn't freeze), spritz with cooking spray and baked in the oven at 450 for 15 minutes. My ultra super extra picky son who is 7 RAVED about these! If I said there was spinach in them he wouldn't have even tried them, so I didn't tell them. He actually said "Mommy! WHY haven't you ever made these before??" LOL! He has now asked me to make them for dinner every Thursday night. My husband loved them too. Never thought about baking a tortilla like that and LOVED how it was crispy! I served them with ranch dressing and sour cream but want to try a spicy ranch or something else next time I make them (which will probably be next Thursday according to my son). Thanks for such a versatile recipe! I probably won't ever try frying because I never fry anything, but baked they were great!

I used wonton wrappers and intead of parsley, I used cilantro. I like it a little more spicy, so I added more chili powder. They were delicious. I also used a dipping sauce with avacados, mayo,sour cream and a few other spices.

The one word that comes to mind is YUM. But it isn't enough. This is a really good recipe. The hint about freezing is a MUST. I tried without and it did not work. Follow this recipe EXACTLY and it will be worth it, I promise.

Made these this weekend. Tried them both ways...fried and baked and actually preferred baked. Omitted the beans as a friend does not care for them. Served with the cilantro cream. I am taking them to a superbowl party. Will have to tripple the recipe!

Very good, I omitted the spinach and followed the suggestion of baking these at 425 for 15-20 minutes, they needed to be covered about half-way through. Used one can of Costco chicken and extra corn and black beans. I ended up with nine.

I did not fry the rolls, instead I baked at 350 for 20 minutes covered in foil. I removed the foil and baked for another 10 minutes. These are absolutely delicious. I made some with the cheese and some without because my husband is lactose intolerant and he loved them.
