Ingredients

  • 10 eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 4 cups shredded Monterey Jack cheese
  • 2 cups cottage cheese
  • 1/2 cup butter or margarine, melted
  • 2 (4 ounce) cans chopped green chilies

Directions

  1. In a large bowl, beat eggs. Combine flour, baking powder and salt; stir into eggs (batter will be lumpy). Add cheeses, butter and chiles. Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 30-40 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before cutting.
