INGREDIENTS

  • 1/2 cup chopped green onions, divided
  • 2 tablespoons butter or margarine
  • 1 (14.5 ounce) can COLLEGE INN® Light & Fat Free Chicken Broth
  • 1 (14.5 ounce) can DEL MONTE® Stewed Tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 (10 ounce) package couscous
  • 1 (15.5 ounce) can black beans, drained, rinsed
  • 1/2 cup shredded Cheddar cheese

DIRECTIONS

  1. In large saucepan cook 1/3 cup green onions in butter until tender. Stir in broth, tomatoes, cumin and chili powder. Heat to a boil; remove from heat. Stir in couscous and beans. Cover; let stand 5 minutes. Fluff couscous mixture with a fork.
  2. Top each serving with cheese and remaining green onions.
