Ingredients

  • 1 1/4 pounds boneless, skinless chicken breast, cut into thin strips
  • 1 tablespoon canola oil or vegetable oil
  • 2 (14.5 ounce) cans chicken broth
  • 1 (16 ounce) package frozen corn, thawed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 medium sweet red pepper, chopped
  • 1 (4 ounce) can chopped green chilies
  • 1 1/2 teaspoons seasoned salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder

Directions

  1. In a large skillet, saute the chicken in oil until lightly browned. Transfer to a 5-qt. slow cooker with a slotted spoon. Stir in the remaining ingredients. Cover and cook on low for 7-8 hours. Stir before serving.
