6 (4 ounce) boneless skinless chicken breast halves
6 ounces Monterey Jack cheese, cut into 2-inch x 1/2-inch sticks
2 (4 ounce) cans chopped green chilies, drained
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon ground cumin
3/4 cup all-purpose flour
1/2 cup butter or margarine, melted

DIRECTIONS
Flatten chicken to /18-in. thickness. Place a cheese stick down the middle of each; top with chilies. Roll up and tuck in ends. Secure with a toothpick. In a shallow bowl, combine the bread crumbs, Parmesan cheese, chili powder, salt and cumin. Coat chicken with flour, then dip in butter and roll in crumb mixture.
Place roll-ups, seam side down, in a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 400 degrees F for 25 minutes or until chicken juices run clear. Discard toothpicks.

This is actually pretty yum. I skipped the coating of flour and butter and just put on the bread crum mixture, beacause I was trying to make it a little healthier. It still tasted great!

This recipe is fantastic and so easy to make!!! We used used Mozz. cheese instead of Jack and it was still great! My boyfriend and I loved it!! We will definitely make again!!

The best kind of recipe-- easy and OH SO GOOD! This dish was wolfed down quickly at the dinner table; we all thought it was delicious. My chicken-breast-hating significant other even said it was (obviously different but...) "as yummy as steak," haha. ONE PROBLEM, though-- watch your chicken carefully in the oven because 25 minutes would have been FAR too much. Our chicken was done to perfection in 17 minutes.

Absolutely delicious! I stuck to the recipe aside from omitting the butter and flour - - it didn't need it. I also used Panko crumbs instead of breadcrumbs and added the slightest amount of garlic powder and black pepper to the breading mixture. Can't wait to try these again. Thanks!

I was worried that this wouldn't turn out since I couldn't get my chicken to roll up right, but I ended up using 3 toothpicks in each piece to keep it shut and most of the cheese stayed inside. It still tasted great and still looked appealing.

This is a delicious and easy chicken recipe! My boyfriend, who cooks once every 6 months made it for me, and it came out exactly like the picture, he couldnt find the chiles so he just bought cheese with the jalapenos already in it, we will def make this again

The recipe was very easy to make. I added rotel inside. I, too, had to use more toothpicks and cooked it about 8 minutes longer. Very good!
