INGREDIENTS

  • 2 pounds ground beef
  • 1 onion, chopped
  • 1 (14.5 ounce) can peeled and diced tomatoes
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 4 potatoes, cubed
  • 1 cup medium salsa
  • 2 cups water
  • 1 teaspoon ground cumin
  • salt to taste
  • ground black pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 cup shredded Cheddar cheese

DIRECTIONS

  1. Cook ground beef and onion until done.
  2. In a large pan add beef, onion, tomatoes, beans, corn, potatoes, picante sauce, water, cumin, salt and pepper to taste, and garlic powder. Simmer, covered, for 45 minutes. I like to use slow cooker and let it simmer all day. Serve; top with cheese.

This is really good. A little fresh finely chopped jalapeno or habenero pepper is a great addition and simmered with the other ingredients. Also at the end a pinch of coriander and a dollop of sour cream as a garnish. Vegetarians use your favorite tvp meat substitute for the ground beef I used Worthingtons Gran Burger 1 cup soaked in one cup warm water for 15 minutes in place of the ground beef. It turned out really yummy.

EXCELLENT! I only used 1 lb beef, didn't drain the tomatoes, used northen beans, and added an additional cup of water. Excellent!! We loved it! It was still very thick but hey! That's a good stew! Loved the mild southwest flair and was filling and delicious. A dollop of sour cream and a little shredded cheddar cheese and viola! Its definately a recipe that I will make again! Thanks so much for this LaDonna!

Very easy to prepare! Use a slow cooker to let flavors abound! I added a little cajun seasoning and a pinch of cayenne pepper! Great when topped with the cheese and a spoonful of sour cream!
