Great meal -- all in one skillet!! I only had long grain brown rice which needs 45 minutes to cook (much longer cook time needed than for the instant rice) so I simply added an additional 28 oz can of diced tomatoes and cooked over medium heat and it turned out amazing and extra nutritous! Husband and five sons all oved it -- thanks for a great recipe!!

Very good skillet recipe; will definately keep you warm on a cold Fall or Winter day! Will make again soon! The only changes I made is that I substituted ground cumin instead of using salt; I also didn't measure out the corn chips and cheese...I used about 3 handfulls of crushed corn chips, and a heaping handful of cheese. Everything else is the same.

very good recipe, I used macaroni because that was what I had, turned out amazing.... topped with a little mexican cheese, sour cream, and fresh salsa... delish!

I really liked this, I added a can of tomato sauce and used macaroni instead of rice. I also followed the suggestion to eat it with lettuce and cheese and sour cream. Great recipe :D

I really liked this, and my husband had seconds. The only issue I had was it seemed sloppy compared to what I like...even though I omitted the water called for. I think next time I will add extra rice or macaroni in it.

our family enjoyed this. we added more rice, water,corn chips, and substituted black beans for kidney.which is our prefence. Husband and I both thought it would have gone well with tortillas.

Easy recipe to use with things on hand. Blend tomatoes and green peppers for kids next time. Added cilantro and a little hot sauce for adults.

We liked it. I didn't have any fresh veggies so I used stewed tomatos and dried onions! It was still good. Probably better with fresh ones! We'll definately be trying this again, but with fresh veggies!

This also works with elbow macaroni. (Think Hamburger Helper, but homemade and WAY tastier.) You can add a little more flavor by using a homemade taco seasoning, too. We serve this with shredded lettuce, sour cream and salsa. Tasty and filling meal.

I made this for my husband's dinner last night and his friends ended up over for dinner also. They all LOVED it. It was very easy to make and the recipe makes a lot. I did change a few things-sorry. I added more chili powder, cayenne pepper, a can of corn, and topped it with Fritos chili cheese flavored corn chips and sour cream. I will definitely be making this again since it was easy and the ingredients were inexpensive.

Very yummy! I added an extra fresh tomato just because I needed to use it up and I added some cayenne pepper b/c we like it a little spicy. This was a great weeknight easy easy recipe. Will make it again! Picky hubby liked it too!

I was really surprised at how good this is. It was really tasty. I only put in about half of the kidney beans and added more rice. Didn't put in the salt and used garlic powder instead of garlic salt...prefer to not add anything salty.

This recipe is fantastic! Such a simple comfort food... all three of my kids cleared their plates... my 9 year old daughter asked for 3rds then finished it off for breakfast! The only changes I made were used 2t. taco seasoning insead of the other seasonings (but due to taste preferences I kept the measurement of salt the same. Then I used regular rice and just simmered it all until the rice was done.
