Southern Chess Squares

INGREDIENTS

  • 1 (18.25 ounce) package yellow cake mix
  • 1 cup melted butter
  • 1 egg
  • 1 cup chopped pecans
  •  
  • 2 (8 ounce) packages cream cheese
  • 4 cups confectioners' sugar
  • 2 eggs

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Mix together the cake mix, melted butter and the egg. Stir in the chopped pecans. Press mixture into the bottom of the prepared pan. Set aside.
  2. In a large bowl, beat the cream cheese with the confectioners' sugar. Beat in the eggs one at a time until blended.
  3. Pour cream cheese mixture over crust. Bake in the preheated oven for 45 minutes. Cool in the pan, then cut into squares before serving.

This is great. I added a can of cherry pie filling on top and it tasted just like cheesecake.

This recipe for chess squares works very well, and is easy. I cut it in half, and it fit a 9" round pan perfectly. They are really, really sweet and very rich. The recipe makes a lot of the cream cheese layer, you could easily cut it in half if you want less sugar. Overall, if you like chess squares, this recipe is great. If you think it's too much sugar, you're obviously not from the South.
