1/4 pound sliced bacon, diced
1/4 cup chopped onion
1 (15.5 ounce) can hominy, drained
4 eggs, beaten
1/8 teaspoon pepper

DIRECTIONS
In a skillet, cook bacon until almost crisp; drain. Add onion; continue cooking until bacon is crisp and onion is tender. Stir in hominy, eggs and pepper. Cook and stir until the eggs are completely set.

This was different...and I liked it. :-) I had a can of hominy and the only thing I know to do with it is make posole, which I didn't feel like bothering with, and I came across this recipe. It seemed like an odd combination, but I didn't see any reason why it wouldn't all taste good together. I'll be making it again.
