"This is one of my mom's recipes, except she used raw potatoes. I made it faster to prepare by using frozen hash browns, and it tastes every bit as good. Whenever I eat these potatoes, I always remember the pleasure of eating Mom's cooking."

INGREDIENTS
1 (32 ounce) package frozen cubed hash brown potatoes, thawed
2 cups sour cream
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1 cup shredded Cheddar cheese
1/2 cup butter or margarine, melted
1/2 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon pepper
1 cup French-fried onions

DIRECTIONS
In a bowl, combine the first eight ingredients. our into an ungreased 2-1/2-qt. baking dish. Bake, uncovered, at 350 degrees F for 1 hour. Sprinkle with onions; return to the oven for 10 minutes.

I made this for a side on Christmas Day. I get so bored with Mashed Potatos and gravy. EVERYONE LOVED this recipe. It was so easy using the frozen hash browns, which by the way I used shredded instead of cubed. It was fantastic.

I've made this recipe several times, and it's always a big hit. It's great for potlucks. However, I reduce the butter and sour cream in half to reduce the richness.

I had my husband go to the store, so I ended up with shredded potatoes instead, and it came out awesome! Everyone, especially the kids, loved it!! I will definatly make it again. I would suggest increasing the cheese though, because the sour cream was slightly overwhelming the rest of the flavors.

I cook dinners for our church every Wednesday night which consist of 75 people, so I'm always looking for new recipes. When I found this one it sounded pretty good, so I though I'd try it. Well, it was a huge success. In fact, I had two ladies ask me for the recipe. This was one of the best recipes I've tried and was so simple to make. I was told by several of the people tonight that I could fix this again and again and they would be very happy with that. So thanks a bunch to Betty Claycomb for submitting the recipe...truly a success in my books!!

i made this using ore ida brand o'brien potatoes (with onions & green peppers already in there). It was awesome! Didn't have to chop onions & we both like green pepper so worked great! Topped w/a little extra cheese at the last minute. Terrific leftover too!

Wasn't 100% sure if family would like this, but boy did they. Trying it would diced, cooked ham with broccoli as a side dish.

absolutely awesome. My wife loves this recipe and is always asking for it. Then when I make it she gets mad at me because she can't keep from eating half of them (Not really healthy). I will continue to make this recipe (Unaltered)and will just have to get used to being yelled at. :)

This was easy to make, and tasted fantastic. I do agree with a few reviewers that more cheese is needed. Other than that, Its a great side dish.
