I chose this recipe randomly and am so glad I did! My family is asking for the recipe. It's very easy and great tasting. I made mini muffins rather than loaves and baked for about 10 minutes (still at 350). Thanks to Sophie for a great recipe!!

Wonderful! I shredded too much zucchini (4 cups, squeezed of excess liquid), threw the extra in and it turned out great. Used 1/2 c. applesauce, 1/2 cup veg. oil. It's getting raves. Made a second batch with 2 cups of wheat flour, 1 cup white flour and didn't like it nearly as well.

I don't do a lot of baking, so I don't have a lot to compare this to...it is a really easy recipe and extremely tasty!! I didn't make any changes - everyone loved it! One thing that I occasionally do when making muffins is substitute half of the oil with applesauce. It doesn't really change the flavor/texture but lightens it up a bit. However, this bread is fabulous as is!

I didn't really care for this recipe. The texture was all right (maybe a bit too dense and even chewy like actual bread) but when I tasted it, all I could say was, "Cinnamon". It was overwhelmingly cinnamon, in my opinion. If I ever try this recipe again, I'd reduce the cinnamon or experiment with some other flavorings.

Fantastic recipe and very easy to make. To help with kids eating the bread I grinded up the zucchini into very small bits so there were no large chunks of veggies, it was all distributed evenly. Big hit with everyone!

Great recipe. I substituted homemade applesauce (also from this site) for the oil, and reduced the sugar by one third. I also used half whole wheat, half white flour with a quarter cup of rolled oats to make it even healthier.

Delicious! I substituted applesauce for the oil, and used 2 c. whole-wheat flour and 1 c. all-purpose flour instead of all A-P flour. It still came out moist and delicious.

I made this yesterday afternoon. It was inhaled and gone by 8am this morning. My 6 yr old daughter wanted it in her lunch box and my 4 yr old wanted it for breakfast. My husband ate it all night and this AM. A couple of small changes, I added 1/2 cup less sugar and will probably add even less next time and I reduced the oil and added applesauce instead. I also made it in a 9x13 pan. It definitely will be made again. Thanks!

This is a must try!! I used 1 cup white sugar and 2/3 cup brown sugar, but changed nothing else and my 2 year old son keeps asking me for more. Will make this for years to come, Thank you.

I sub'out some of the flour for whole wheat and oats, subbed out some of the oil and an egg for applesauce, and put about 4 oz of 74 percent dark choc pieces. Also, I prefer to bake these as muffins (portion control) and easier to give away. YUMMY! Everyone who tastes my mod'ed up version wants the recipe. Very good! Will continue to make, esp great when Zucchinis are in full-season mode (muffins are great frozen, then can thaw and eat later).
