I made a batch of these cookies b/c I needed something extremely quick to bring to a last minute pool party. My husband and son like a chewy cookie so they enjoyed this very much--I did have to add some yogurt to make it a bit more moist for mixing. I also added chocolate chips instead of the raisins. My oldest son said they tasted like coconut. An easy low/no fat recipe (if you leave out the chips!)

I doubled this because my cake mix comes in an 18.25 oz. box. It was dry as written, so I increased the amount of applesauce. I used 1/2 cup for the doubled recipe, so it would make the original read 1/4 cup applesauce.
