This variation of the poke cake uses raspberry gelatin and lemon-lime soda to make it extra moist. Serve it straight from the fridge.

This cake is fantastic to have all year long - but I use it primarily in the summer because it's kept refrigerated so it's nice and cool.

An incredibly moist and light cake made with cake mix, strawberry gelatin and fresh strawberries. Great for summer picnics and get-togethers. Can be made to be very low fat by using an egg substitute and applesauce instead of oil in the cake mix and using fat free topping.

My grandmother would whip this up whenever company dropped by in the summer, or for family dinners on Sunday afternoon. Top with sliced fresh fruit.
