Snow on the Mountain Green Beans

"This is a side dish of fresh green beans cooked in olive oil and lemon juice and topped with feta cheese."

INGREDIENTS

  • 2 pounds fresh green beans
  • 2 tablespoons butter
  • 1 tablespoon extra virgin olive oil
  • sea salt and ground black pepper to taste
  • 1 1/2 tablespoons lemon juice
  • 1/2 cup crumbled feta cheese

DIRECTIONS

  1. Bring a large pot of lightly salted water to a boil. Add green beans, and cook uncovered until just tender, 3 to 4 minutes. Meanwhile, melt the butter with the olive oil in a large skillet over medium-high heat. When the beans are almost tender, drain and add to the skillet. Continue cooking the green beans in the butter until they are tender, about 2 minutes more.
  2. Season the beans with salt, pepper, and lemon juice. Place onto a warmed serving dish, and sprinkle with crumbled feta cheese.

N*R I didnt' think I was going to like this, since I hate green beans, but my family likes them, and loves feta. They RAVED over it, so I tried it. Turns out, I only hate BAD green beans! These are GREAT, and how our family will fix green beans from here on out!!!

This was pretty tasty, I went by the review which stated to add bacon, and it was good. I think next time I will use a flavored feta. Probably will make again. Im so mad I didnt get a chance to take a picture, By the time I remembered there was only a few beans and pieces of feta left!lol N*R
