Eggplant Tomato Salad

This incredible concoction of roasted peppers, eggplant and tomatoes is simmered with cayenne and tomato paste. It can be spooned onto a crisp bowl of greens, tossed into hot pasta, or spread on toasted rounds of French bread.

There are different ways to make grilled eggplant salad, a very common summer salad in my country. This is a version called 'agioritiki' named from mount Athos (Agion Oros). It's refreshing with smoky flavor and can stay refrigerated up to three days. Serve it as a salad or on top of whole-wheat bread slices.

This is a traditional North Indian (Punjabi) Bhurtha made with eggplant and tomato, and seasoned with cumin, turmeric garlic and ginger. Serve with fresh roti or naan.

This cool, refreshing blend of plain yogurt, chopped cucumber, dill, and garlic is a perfect accompaniment to lamb or rice, or both! Mint may be used in place of the dill. 

Eggplant Fillets with Cream Sauce

An invigorating, Asian influenced dish. Serve eggplant on a bed of Asian green bean vermicelli, or rice, and top with sauce. Excellently complimented by a chilled, dry white wine. This is a recipe I created recently. It is a work in progress, so I would welcome feedback.

First the cucumber slices are "cured " for half an hour in garlic paste and salt. Then they 're sprinkled with dried mint, and combined woth yogurt.
