Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  2. Peel sweet potato with a vegetable peeler and discard skin. Continue using peeler to create thin strips of sweet potato; transfer to a large bowl. Drizzle strips with olive oil; toss to coat. Mix Parmesan cheese, kosher salt, pepper, paprika, and garlic powder into sweet potato strips; toss to coat evenly. Spread coated sweet potato strips evenly onto the prepared baking sheet.
  3. Bake in the preheated oven until sweet potato chips are crispy, 20 to 25 minutes.

Followed the recipe to the T. This recipe has too much spice (not that it tasted spicy, just not the right balance of flavors). The time and temperature must be off a bit because my chips were burning at half time! Maybe the stated time/temp would have been better for fries?

I agree with the first commenter. It unfortunately has too much spice. I think that maybe SOME paprika, garlic powder and salt with butter would be better. The cheese, seasonings and olive oil created a blob and did not mix well on the chips.
