butternut squash - peeled and cut into cubes, seeds removed and reserved
canola oil, divided
1 1/2 teaspoons
1 1/2 teaspoons
chipotle chile powder
minced fresh ginger
salt and ground black pepper to taste
fresh Brussels sprouts, cored and separated into leaves
1 1/2 cups
crumbled goat cheese, or to taste
seeds of 1 pomegranate
This recipe worked great for our dinner party. Only point is you might have to mix in water and then heat in a pot to produce the amount needed (as this depends on how ch squash you started with). But very tasty and will make again soon.
