Smoked Sausage Scramble

Ingredients

  • 1 medium potato, cubed
  • 1 tablespoon chopped onion
  • 1 tablespoon vegetable oil
  • 1 cup torn fresh spinach
  • 1 cup cubed smoked sausage
  • 4 eggs
  • 1 tablespoon water
  • 2 slices American cheese, diced

Directions

  1. In a large skillet, cook the potato and onion in oil until potato is tender. add spinach and sausage. In a bowl, whisk the eggs and water. Pour over sausage mixture. Cook over medium heat, stirring occasionally, until eggs are completely set. Top with cheese. Serve immediately.
