Smoked Salmon Quesadillas

INGREDIENTS
4 ounces cream cheese, softened
2 tablespoons sour cream
1 teaspoon dill weed
1 garlic clove, minced
2 tablespoons butter or margarine, softened
6 (8 inch) (8 inch) flour tortillas
4 ounces smoked salmon, chopped
2 cups shredded Swiss or Cheddar cheese

DIRECTIONS
In a small mixing bowl, combine the cream cheese, sour cream, dill and garlic. Spread butter over one side of each tortilla. Place three tortillas, buttered side down, on a griddle or large skillet. spread with cream cheese mixture; sprinkle with salmon and cheese. Cover with remaining tortillas, buttered side up.
Cook over low heat for 2-3 minutes or until golden brown. Turn and cook 2-3 minutes longer or until cheese is melted. Cut into wedges.

I made this recipe this evening after purchasing one of those envelopes of smoked salmon from Chicken of the Sea. It was absolutely delicious, and I'm sure would had been better with a better quality smoked salmon. I did make some changes: whole wheat tortillas from Whole Foods (they bake them while you watch!), fat free cream cheese, low fat feta (instead of swiss), and fat free plain greek yogurt (out of sour cream). Awesome! I will definitely recommend this again, especially for anybody who chooses to follow a lower/healthier carb diet or those who have medical challenges that require such a diet.

I made these for a party last night, and they were a hit! I found it easier to mix all of the ingredients together and spread on the tortilla shells. I used 10" tortillas because that's what I had around the house; it made two of them.

I'm rating this a five but I have to admit I didn't follow the recipe. Instead of the smoked salmon I used a shrimp and crab mixture. The cheese mixture for the was delicious and that is what I'm rating. It tasted amazing and the consistency was perfect. I will definetely try this again with the smoked salmon because this was great! Thank you!

These were so good I made mmm noises while eating them!!!!! I did 1/2 swiss & 1/2 Cheddar and followed recipe exactly. It was scrumptious!!

On the whole wasn't bad. I'm not a big fan of fish, but have been trying to find recipes where it won't be overpowering so I can work it in to my diet. It might have been the brand of salmon I bought, but I found it a bit strong for my taste and couldn't eat much of this. Even others in my house who usually enjoy fish found it a bit overpowering. Only made it the once though, so I can't say it is a bad recipe; it might just have been me.

The french go crazy for smoked salmon...so this was a hit for cinco de mayo...I wanted a bunch of mexican finger foods...was great with sour cream, salsa, and guac to dip...THANKS!

Yummy! We used real smoked salmon (the joys of being in Alaska). Kids even enjoyed it! Definitely a keeper!
