I made this but I omitted all the liquid at the end and left out the butter and cheese to make it VERY healthy and we loved this!

This was soooo good! It's my new favorite vegetable recipe. Next time I'll double it since we didn't have enough left overs. Also, I used 2 c instead of 3 c broth. It was still a bit runny so even less would be good, although I didn't mind it runny. The best part was my 1 yr old loved it...she eats like a bird so I love finding things she scarfs.

This was pretty good. I used a bag and a half of frozen cauliflower and boiled it in about half the amount of broth called for. It wasn't runny at all, but a skosh bland.

Good taste - 1st recipe where I tried out parsnips. Husband really liked it - I thought it could use a little more zing. Drained cauliflower so as not to have the soupy texture like others. Did not get the mashed potato texture using a masher - will use the food processor next time.

I actually used this recipe as the topping to a shepherd's pie and it was awesome! The perfect addition for that. However, I gave it four stars because I don't think it would be good by itself as a mashed potato substitute. Will have to try again though. Thanks for the recipe!!

I've actually made a much simpler version of this by just steaming the cauliflower, adding the butter and parmesian because I didnt have any other cheese. It tastes almost as good as the original recipe- and is kid approved. My 5 year old who hates mashed potatoes loves smashed cauliflower.

Great recipe. But with all recipes of this type BAKE the cauliflower whole, wrapped in foil. This eliminates the unwanted extra moisture common to so many recipes. This also enhances the veggies flavor. When mashing add a sachet of dried chicken bouillon. I also added fried onion and some bacon bits.

This is smashalicious!!! I used a really large head, and so used only a half-cup less broth than called for. Everything else was followed exact with scrumptious results! This one gets carded. Thanks for sharing this!

Maybe I did something wrong, but I really followed the directions! The liquid didn't reduce to half, even after 20 minutes. There was still a cup of liquid in the pot.

I ended up steaming the cauliflower with the chicken broth then adding the cheese, no butter, some garlic powder, and 1/3 cup sour cream then smashed it with a potato masher. Turned out pretty good and got rave reviews from my family.

I thought the cauliflower turned out a little runny. Next time, like some of the other reviews, I'll reduce how much chicken broth I use, and some of the other suggestions that Brooke006 suggested.

I really liked this version. I remember my mom making these a while ago and they had no flavor. These had wonderful flavor! I did cook until almost all the liquid was gone. It still seemed a bit runny. Also, I didn't have white cheddar. used a bit more parmesan and just a sprinkle of mild cheddar.

I agree with other reviewers to drain before mashing. I didn't have to add any liquid and they were fine. Really liked the recipe and will use again, but will play around with the cheese and butter content. For personal reasons I would cut down next time on both items as it was a little on the rich side for a week nite meal. Try this recipe it;s a nice change from mashed potatoes!

Thanks to all you tipsters for the warning about being runny. After cooking, I drained the liquid into a bowl and gradually added a small amount of it after mashing the cauliflower and cheese. Still did not have the right consistency, so I threw in a large handful of potato flakes-that did the trick!
