This soup was excellent. I like a tomato based vegetable soup so instead of 3 cups water, I used 1 cup water and 2 cups V8 tomato juice. For sure I'll make this again.

Very good basic vegetable beef soup. I added a tablespoon of garlic powder, worchester sauce, a bay leaf and some season-all salt to taste. I also used 2 lbs of stew meat and it came out perfect...really good on a cold night.

The soup is wonderful. I added frozen corn for the frozen veggies. The flavors blended well together, great soup make sure and try it.

I had a sirloin steak left over from the grill and was looking for a way to use it up. This worked beautifully. I cubed the steak, added a packet of Au Jus mix and water and let it simmer. Meanwhile, I diced onions, celery and carrots and sauted in olive oil. When the veggies were soft, I added them to the beef mixture. I chopped three potatoes and added them as well. Then tossed in a cam of diced tomatoes, green beans and corn. Seasoned with basil and oregano and stirred in ketchup. Even my veggie-hating son ate it up!

GREAT with a couple of additions/changes. 1) Didn't do water, used a whole carton of beef broth instead 2) added MORE veggies than written including some uncooked beans 3) added a lot more spice including chili flakes (as I like zee spice!), garlic powder, bit of cumin, parsley and a bay leaf. Soooo good!

Sorry but this soup was boring and tasteless. Added garlic, salt, onion seasonings, parsley and whatever else I could find to give it a big boost.

4.5 stars! This was great, I was searching for a veggie soup and this was a great find. First soup I ever made and a big hit with my family. I added another potato, and only used 1 onion as we are not big onion fans. Very good still. Next time maybe a bit more onion, a few more spices, perhaps the parsley and sugar that another reviewer mentioned. Tomato juice as well instead of all that water, maybe beef broth? Pretty excited to make this again!

I made this recipe based on the other reviews. I was very disappointed in the flavor. Too much basil and oregano. Not the vegetable soup I was hoping for at all. I won't make this again.

This was outstanding! So easy! I made this last week to take to my friend's elderly mom and it never made it - we ate it! I made another batch for her and dropped some off to my daughter - she requested more. Everytime I made it I had to add another 3 cups of beef broth, but that was fine, it just stretched it. You can really adapt this to your liking. Thanks!

excellent recipe. The flavor was spot on and my whole family loved it. The only changes I made were that I substitued 1 12oz can of V8 for one of the cups of water, used only frozen corn and peas because that was what I had and added one can of drained kidney beans. I will definitely make this again. It makes a lot of soups, but I am excited about the leftovers. Thanks for such a comforting recipe.
