This recipe deserves so much more than five stars. It tastes great, is extremely easy, and is also good for you. What more can you ask from a recipe? Although excellent as is, I only made some changes because we love lots of heat. I use Old El Paso "hot and spicy" taco seasoning, canned diced tomatoes that include jalapenoes, and add approx 1/4 cup (maybe more, have never really measured) of diced jalapeno peppers that you can find in the pickle/relish section of your grocery store (another time saver). Once it is ready to serve, break up tortilla chips and put over the top with some shredded cheese, and corn muffins on the side (also made with jalapenoes), and ta-da. Thanks Janeen for such a great recipe to add to my favorites!
