Wow, this is delicious! I had to omit the onion, bell pepper and black olives due to family preferences, so I made up for it by adding an extra pound of beef, and I used tomato sauce instead of juice... the remaining combination was outstanding. We added shredded cheese and sour cream to taste, and it made a wonderful soup/chili. And it was so easy! This is definitely a winner in our family!

We doubled the recipe to feed 15 people after a long day of moving and not a bite was left. We topped with cheddar, sour cream, additional black olives, green onions and dorito and frito chips and everyone is still talking about it.

delicious! only gave it 4 stars because I had to make the following changes: I had to use tomato sauce, because I already had it. I also added a little chili powder for a lil kick. I loved it! I accompanied it with some fritos. yummy!

My family LOVED this! We cannot wait to eat the leftovers tomorrow! I used ground turkey instead of beef. I also added about 3 additional cups of tomato juice. Thank you so much for sharing this recipe! Delicious!

I make this a lot for easy work lunches. I freeze it in single serving containers so I can just grab and go. It freezes very well. Sometimes I substitute the beef for ground turkey, and both are great. I also use 1 cup of chicken stock instead of tomato juice because I never have tomato juice on hand. I drain my corn and black beans and add chicken stock accordingly. Whenever I heat it up in the microwave at work, my co-workers always comment on how good it smells.

Great Soup!!My boldest daughter drools over this soup. She asks me to make it all the time. Only 2 things I do differently. 1 I don't like chunks of peppers or onions, so I run them thru my chopper, chop them very fine. 2 instead of tomato juice I use a 14.5 oz can tomato sauce and a can of water. Use rotel diced tomatoes with green chilis......makes a spicier soup than any other brand!

I used chicken instead of beef - just threw in 4 frozen breasts with everything else (plus about 2 cups water) and cooked on high for 4 hours (then shredded the chicken breasts & threw them back in). Otherwise I followed the recipe - using hot taco seasoning to make sure there was enough heat (we like things spicy). Very easy & tasty meal.
