Great recipe. The only thing that I would really suggest is something to bring the flavor into the meant. Perhaps marinating it in a salt, sugar, garlic, wine, water, and a little fish oil brine for a day. As it is now, the seasoning in the sauce is great and the meat is tender and falling apart, however, the meat just tastes bland in contrast to the great sauce.... Flavoring it first would make the flavors blend perfectly.
