Directions

  1. Coat a large skillet with nonstick cooking spray. Heat skillet over medium-high heat. Brown meat in hot skillet; drain off fat. Transfer meat to a 3-1/2- to 4-quart slow cooker. Top meat with bell pepper and onion.
  2. Drain canned fruit cocktail, reserving juice. Cover fruit cocktail pieces and refrigerate until needed. Combine reserved fruit cocktail juice, vinegar, soy sauce, ketchup and garlic in a small bowl. Pour over meat and vegetables in slow cooker.
  3. Cover and cook on low for 8 to 10 hours or high for 4 to 4 1/2 hours. Stir in reserved fruit cocktail pieces. Serve over hot cooked rice. If desired, sprinkle with sesame seeds.

Awesome! I substituted chicken thighs for the pork, pineapple for the cocktail, and added some halved grape tomatoes at the end. The sauce need some thickening, so added a couple teaspoons of arrow root (Corn starch would work too). Served over Brown rice and can't wait for leftovers tomorrow night.

We used these ingredients but cooked in a Wok. 20 minutes later and my family was eating and happy.

This was a super hit. Everyone in my family loved it. I did use only 1 green pepper instead of 2. My family likes bell peppers only in moderation ;-). I also did not add the bell pepper and drained fruit cocktail until last 30 minute as well as tad bit of water as the juice from the fruit cocktail can was not quite enough "sauce". Great taste and so easy!
